ITALIAN CREAM CAKE
Ingredients
- 1/2 cup butter , softened
- 1/2 cup shortening
- 2cups sugar
- 5large eggs, separated
- 1tablespoon vanilla extract
- 2cups all purpose flour
- 1teaspoon baking soda
- 1cup buttermilk
- 1cup flaked coconut
- Nutty cream cheese frosting
- 1cup chopped pecans, toatsted
- 1 8 oz. pagckage cream cheese, softened
- 1/2 cup butter, softened
- 1 tablespoon vanilla extract
- 1 16oz. package powdered sugar, sifted
Directions
- beat butter and shortening at medium speed with an electric mixer until fluffy
- gradually add sugar, beating well
- add egg yokes, one at a time, beating until well blended after each addition
- add vanilla; beat until blended
- combine flour and soda; add to butter mixture alternately with buttermilk, beginning and ending with flour mixture
- beat at low speed until blended after each addition
- stir in coconut
